Slow cooker chicken and dumplings.

Above is the results of my slow cooker chicken and dumplings experiment from yesterday. It turned out okay, but I probably won't make it again. It was way too rich and fattening. We both got a stomach ache and felt like fatty butterballs after eating a bowl.

The next thing I make in that slow cooker will be way less naughty.

Lunch today was lavash bread stuffed with mixed greens, tomatoes, sesame ginger dressing, sesame crunch thingies, carrots, and chicken breast. It was pretty good and a refreshing change from the standard turkey with mustard and spinach on whole wheat.

My first attempt at making something in the slow cooker. I've been dreaming of chicken and dumplings for awhile and found a very highly rated recipe on Allrecipes.com that made me salivate. It's been a few hours and it seems pretty liquid-y. Maybe I did something wrong, I don't know. I guess we'll find out in four hours.

I would say comfort food is husband's favorite type of food, so I try to find recipes of that ilk.

The husband and I are lapsed vegetarians. We only recently started cooking with chicken. He's the one who is in charge of selecting it in the store, cleaning it, and cooking it. I am still pretty squeamish about dead animal flesh.

Last night we had chili I had frozen a few weeks ago. I forgot to snap a photo and post it. It was good. Usually husband makes the chili. It's always a little different each time. This most recent batch had sweet corn and sweet potatoes in addition to the usual tomatoes and various beans.

African peanut stew tonight... INCREDIBLE! Vegetable broth, red bell peppers, cayenne pepper, chili powder, onion powder, rice, crushed tomatoes, and peanut butter. Unbelievably rich considering it's vegan.
